I'm really tired of this new trend in ZUN's writing where he uses his characters as inept mouthpieces that comment on the modern trends How did we go from mystical and whimsical fantasy stories full of legendary eastern creatures and gods, to current day references that will get old in a couple of years (or months)?

You must be confused OP. ZUN hasn't made a new game since 2006, almost 20 years ago. His last game was Touhou 10: Concealed the Conclusion, which wrapped the whole story up nicely. There's really nothing to go back to.

To this day whenever I remember the ending or hear the final stage theme I want to bawl my eyes out... I miss Touhou
