Synthetic banana flavoring is based heavily on the sweet Gros Michel banana, but modern grocery store bananas are mainly of the Cavendish variety, which does not have as sweet of a taste. This is why sometimes banana flavored products do not taste like regular bananas.

Because of the way commercial plantations cultivate bananas, the Cavendish banana is at extreme risk of being wiped out by plant diseases. In fact, that was what happened to the Gros Michel in the late 1960s. The fungus responsible for that event is currently in the process of spreading to Cavendish plantations worldwide.
