Self-deprecating humor is often times an attempt at exorcising one's own insecurities. Your friend may joke about it a lot, but deep, deep down, she's really insecure, and she's trying to bury those insecurities with humor and irony.
And often times (pretty much always lol), these attempts fail miserably. You remain insecure and achieve absolutely nothing except making a clown out of yourself. And not only! Some ancient roman guy (i think) once said that "you are what you think", and that's 100% true. If you think negatively of yourself, you're not helping yourself overcome those insecurities. You are in fact making them stronger. Essentially, you become your own bully, constantly feeding you with negativity 24/7
Your friend must have been bottling up that negativity for a while. There's nothing wrong in feeling offended, especially by a friend you thought you could trust, but she didn't realize the completely wrong image she gave of herself. Add to all that the classic female irrationality, and you've got yourself a bomb ready to explode and kick you out of her house.
I do not blame you, OP, but I don't blame your friend either. In this situation, it's completely useless to blame someone. Just apologize, explain that you didn't mean to offend her and make peace.
And now, to actually answer your question: Yes. It's a statistics thing. Fat people are insecure, so they'll tend more to use self-deprecating and harmful-for-the-self humor, and women can be real hotheads sometimes. Your friend ticks all boxes, and was bound to explode like she did with you. Hell, maybe behind closed doors, she blows up periodically.
I recommend you suggest to her, as a friend, to drop that humor. Negativity breeds negativity and stasis. Positivity, on the other hand, breeds positive things, and eventually sets things into motion, resulting in changes.
