I've heard that in my language, French, the letters "oi" used to be pronounced as "wé" rather than as "wa", which feels like a funny way to speak French ("L'État, c'est moué!"(although it's unclear wether or not Louis XIV actually said that)). So it's my favourite historical sound change due to it being the only one I can think about.
