Super Castlevania IV!

It's a bit hard around 2/3rds in with the platforming but the combat is pretty easy. I think you'll have a lot of fun with it. It may not be the most challenging Castlevania of the first four games, but it's still worth checking out. Lots of cool whip action, and the animations and attention to detail with the pixel art are sure to interest you.

But if you're not so much into traditional platforming, you can also try Symphony of the Night. It's a classic, but it plays more like Metroid and pretty easy to breeze through, as well as almost all the other Castlevanias that came after it - hence the term "Metroidvania". Still a lot of cool animations in there, you might like it.
