They aren't mocking an animal, they're using the cutesy cartoon depiction of the animal to show what it was going through when they forced it to race for money and got injured. It might make otaku empathize more with the actual animal instead of the gook drawing of a girl. And mocking something doesn't mean you aren't protecting it (´人｀)
